Ingredients

The Pork Chops

  • 4 pieces bone-in pork chops (about 2 lbs)

The Marinade

  • ¼ cup olive oil
  • ½ cup coconut aminos
  • 3 tablespoons honey or soaked deglet dates
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • pinch fine salt

Instructions

  1. If using honey, mince or press the garlic and combine all marinade ingredients in a small bowl, whisking to combine.
  2. If using soaked dates, roughly chop the garlic and blend all marinade ingredients in a food processor until smooth.
  3. Place pork chops in a large container or zip-top bag, reserving some marinade for brushing later.
  4. Pour the marinade over the chops, ensuring they are well coated, then refrigerate for 4-12 hours.
  5. Remove the chops from the refrigerator and let them sit at room temperature for 20 minutes while preheating the grill to 425-450°F.
  6. Remove the chops from the marinade, letting excess drip off, and discard the marinade.
  7. Grill the chops for 8-10 minutes, brushing with reserved marinade, then flip and grill for another 5-7 minutes until the internal temperature reaches 145°F.
  8. Let the chops rest for 3 minutes before serving.
