Ingredients

  • 1 pound fresh roma tomatoes
  • cup red onion
  • 1 unit jalapeno
  • 3 cloves garlic
  • cup fresh cilantro
  • 2 tablespoons fresh lime juice
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • to taste unit salt

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Add the tomatoes, onion, garlic, and jalapeno to the smoker.
  3. Smoke the vegetables for 90 minutes to 2 hours.
  4. Remove the vegetables from the smoker and add them to a blender or food processor along with the lime juice, cumin, chili powder, and salt.
  5. Blend and pulse the ingredients until combined, adjusting spices to taste.
  6. Serve immediately or chill before serving.
