Grilled Jerk Chicken Skewers with Peaches

Ingredients

The Skewers

  • 2 lbs chicken (boneless, skinless breast or thigh)
  • 3 pieces peaches, sliced into wedges
  • 1 piece red onion, sliced into wedges
  • a handful cilantro for garnish

The Marinade

  • cup olive oil
  • cup soy sauce
  • ¼ cup lime juice, more for squeezing
  • ¼ cup honey
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic
  • 1 tablespoon fresh ginger, thinly sliced
  • 1–2 pieces Scotch bonnet peppers, habaneros, or jalapeños, chopped in half
  • 1 piece shallot, chopped (or sub with 3 scallions, or ¼ cup red onion)
  • 1 tablespoon fresh thyme leaves (or ½ tablespoon dried thyme)
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • 1 tablespoon plus 1 teaspoon ground allspice
  • ½ teaspoon cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Soak the skewers in water.
  2. Cut the chicken into 1-inch chunks and place in a bowl.
  3. Blend all marinade ingredients until smooth and pour over the chicken. Marinate for 30 minutes to 1 hour.
  4. Preheat the grill to medium-high heat.
  5. Slice the peaches and onion into ¾-inch thick wedges.
  6. Using gloves, skewer the chicken, peaches, and onion.
  7. Grill the skewers until seared with grill marks, then reduce heat to low, cover, and cook until chicken is done.
  8. Serve on a platter, squeeze lime over, and garnish with cilantro.
