Grilled Jerk Chicken Skewers with Peaches

The Marinade

Scotch bonnet peppers, habaneros, or jalapeños, chopped in half

shallot, chopped (or sub with 3 scallions, or ¼ cup red onion)

Instructions
- Soak the skewers in water.
- Cut the chicken into 1-inch chunks and place in a bowl.
- Blend all marinade ingredients until smooth and pour over the chicken. Marinate for 30 minutes to 1 hour.
- Preheat the grill to medium-high heat.
- Slice the peaches and onion into ¾-inch thick wedges.
- Using gloves, skewer the chicken, peaches, and onion.
- Grill the skewers until seared with grill marks, then reduce heat to low, cover, and cook until chicken is done.
- Serve on a platter, squeeze lime over, and garnish with cilantro.
