BBQ Chicken, Peach and Poblano Skewers

Stubbs Original BBQ Sauce

Instructions
- Soak bamboo skewers in water for at least 30 minutes.
- Cut chicken into 1 inch pieces and marinate in half the bottle of BBQ sauce for 20+ minutes.
- Chop the poblano, onion, and peaches while the chicken is marinating.
- Thread pieces of chicken, peaches, poblano, and onion onto the skewers.
- Heat the grill to medium direct heat (approximately 350 degrees).
- Oil the grill grates to prevent sticking.
- Mix ½ cup of BBQ sauce with 2 tbsp of orange juice to create a glaze and brush it on the skewers in the last few minutes of grilling.
- Grill the skewers for about 10 minutes, flipping occasionally, until the chicken reaches an internal temperature of 170 degrees.
- Serve with warmed bread or saffron/coconut rice.
