BBQ Chicken, Peach and Poblano Skewers

Ingredients

  • 1 lb chicken tenderloins, cut into 1 inch pieces
  • 1 large red onion, quartered
  • 2 large poblano peppers, cut into pieces
  • 6 large peaches, cut into half and then quartered
  • 1 bottle Stubbs Original BBQ Sauce
  • 2 tbsp orange juice
  • 12+ pieces bamboo skewers, presoaked

Instructions

  1. Soak bamboo skewers in water for at least 30 minutes.
  2. Cut chicken into 1 inch pieces and marinate in half the bottle of BBQ sauce for 20+ minutes.
  3. Chop the poblano, onion, and peaches while the chicken is marinating.
  4. Thread pieces of chicken, peaches, poblano, and onion onto the skewers.
  5. Heat the grill to medium direct heat (approximately 350 degrees).
  6. Oil the grill grates to prevent sticking.
  7. Mix ½ cup of BBQ sauce with 2 tbsp of orange juice to create a glaze and brush it on the skewers in the last few minutes of grilling.
  8. Grill the skewers for about 10 minutes, flipping occasionally, until the chicken reaches an internal temperature of 170 degrees.
  9. Serve with warmed bread or saffron/coconut rice.
