Chipotle Peach BBQ Chicken

The Chicken

boneless, skinless chicken breasts

extra-virgin olive oil
for grilling
Instructions
- Heat olive oil in a saucepan and sauté garlic for about 2 minutes.
- Add chipotle peppers and sauté for another minute.
- Stir in peaches, ketchup, honey, vinegar, salt, and pepper, then simmer for about 5 minutes.
- Cool the mixture and blend until smooth, then refrigerate the sauce.
- Prepare the grill for high heat and clean the grates.
- Drizzle chicken with olive oil and season with salt and pepper.
- Place chicken on the grill and cook for 5-6 minutes, then flip and cook for another 4-5 minutes.
- Add peaches to the grill and cook until softened.
- Baste chicken with BBQ sauce, flip, and cook for 2 minutes, then repeat.
- Check for doneness, then let chicken rest for 5 minutes before serving with grilled peaches and extra sauce.
