Broiled Fish with Summer Grape Tomato Sauce

Ingredients

The sauce

  • 1 tbsp olive oil
  • 6 cloves garlic
  • 1 lb grape tomatoes
  • to taste salt
  • to taste fresh pepper
  • ΒΌ cup fresh chopped basil

The fish

  • 4 pieces flounder (or tilapia or sole)

Cooking spray

  • to taste olive oil spray

Instructions

  1. Heat olive oil in a large skillet over high heat.
  2. Add smashed garlic and cook until golden.
  3. Add halved grape tomatoes, salt, and pepper; reduce heat to low.
  4. Simmer the sauce for about 15 minutes, then add chopped basil and cook for another 5 minutes.
  5. While the sauce simmers, season the fish with salt and pepper, and lightly spray with olive oil.
  6. Broil or grill the fish on medium heat until cooked through.
  7. Top the cooked fish with the tomato sauce before serving.
