Easy Poached Fish in Tomato Basil Sauce

Instructions
- Heat a sauté pan over medium heat and add the tomatoes, garlic, salt, and pepper; cook for 5 minutes until the tomatoes start to soften.
- Add the chicken stock and white wine (if using) to the pan.
- Add the frozen fish fillets and chopped basil to the pan.
- Cover the pan and let it simmer for 20 to 25 minutes until the fish is fully cooked.
- Once cooked, sprinkle with additional chopped basil and serve over rice, couscous, or quinoa if desired.
