Easy Poached Fish in Tomato Basil Sauce

Ingredients

  • 4 6 oz frozen white fish fillets
  • 2 cups cherry tomatoes, cut in half
  • 2 cloves garlic, finely sliced
  • ½ cup light chicken stock
  • ¼ cup dry white wine (or more chicken stock)
  • ½ tsp salt
  • ½ tsp ground black pepper
  • ¼ cup fresh basil leaves, finely chopped (plus more for garnish)

Instructions

  1. Heat a sauté pan over medium heat and add the tomatoes, garlic, salt, and pepper; cook for 5 minutes until the tomatoes start to soften.
  2. Add the chicken stock and white wine (if using) to the pan.
  3. Add the frozen fish fillets and chopped basil to the pan.
  4. Cover the pan and let it simmer for 20 to 25 minutes until the fish is fully cooked.
  5. Once cooked, sprinkle with additional chopped basil and serve over rice, couscous, or quinoa if desired.
