Poached Cod in Tomato Sauce

skinless and boneless cod fillets

The sauce

Paleo-friendly marinara sauce or salsa
The garnish

chopped fresh herbs (e.g. chives, Italian parsley, basil, or cilantro)
Instructions
- Thaw the frozen cod fillets overnight in the refrigerator or run cool water over them for 10-15 minutes if needed.
- Blot the fish with paper towels and sprinkle both sides with salt.
- In a large skillet, pour in the marinara sauce or salsa and bring it to a boil over high heat.
- Once bubbling, carefully add the seasoned cod fillets to the skillet.
- Lower the heat to medium-low and cover the pan, cooking for 5 to 8 minutes until the fish is opaque and cooked to your liking.
- Check the internal temperature of the fish, removing it from heat when it reaches 130°-140°F.
- Top the fish with freshly cracked black pepper and a sprinkle of fresh herbs before serving.
