Ingredients

The salmon

  • 1 pound Salmon cut into filets

The sauce

  • 3 cloves Garlic mashed
  • 2 tablespoons Capers mashed
  • 1 lemon zested + juiced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Basil chopped
  • ¼ cup Extra Virgin Olive Oil
  • to taste Sea Salt
  • to taste Black Pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add garlic, capers, and lemon zest; sauté until cooked, avoiding burning the garlic.
  3. Stir in tomatoes, lemon juice, and sea salt until tomatoes blister.
  4. Add basil and stir to combine; set sauce aside.
  5. Season salmon with sea salt and pepper on both sides.
  6. Heat a skillet with oil and place parchment paper inside, dipping it in oil.
  7. Place salmon on parchment and cook for 5 minutes on each side.
  8. Plate salmon, top with tomato lemon sauce, serve, and enjoy!
