Salmon in Spicy Tomato Sauce

Ingredients

The salmon

  • 2 pounds salmon fillets
  • ½ cup olive or canola oil
  • salt to taste
  • freshly ground black pepper to taste

The sauce

  • 4 cloves garlic
  • 2 teaspoons paprika
  • 1 teaspoon curry powder
  • 1 cup tomato sauce
  • 1 teaspoon chopped ginger
  • ½ small onion
  • ½ scotch bonnet pepper or ½ teaspoon cayenne pepper
  • ¼ cup parsley

Instructions

  1. Heat about 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Season the salmon with salt and pepper, then add to the skillet, skin side down.
  3. Cook the salmon for about 2-3 minutes on each side until the skin begins to brown, then remove and set aside.
  4. In a food processor, blend the tomato sauce, onions, garlic, curry, white pepper, paprika, ginger, scotch bonnet pepper, and parsley until pureed with the remaining oil.
  5. Add the pureed tomato sauce to the skillet, scraping any bits of fish from the pan, and bring to a boil.
  6. Let the sauce simmer for about 5 minutes, then add the salmon back in and continue simmering until the salmon is cooked through, about 8-10 minutes.
  7. Remove from heat and serve with vegetables, bread, or rice.
