Salmon with Tomato Basil Relish

Ingredients

The salmon

  • ½ pound salmon

The relish

  • 2 cups cherry tomatoes, sliced in quarters
  • 1 tablespoon shallot, minced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons fresh basil, finely chopped
  • ¼ teaspoon celtic sea salt

Instructions

  1. Preheat the oven to 500°F.
  2. Cut the salmon into 2 pieces, leaving the skin on, then rinse and pat dry.
  3. Place the salmon skin side down on a metal baking sheet.
  4. Rub the fillets with olive oil and sprinkle with salt.
  5. Reduce the oven temperature to 275°F and place the baking sheet on the lowest rack.
  6. Roast the salmon for 8 to 13 minutes until the centers are still translucent.
  7. In a medium bowl, mix the remaining ingredients to make the relish.
  8. Remove the salmon from the oven, transfer to plates, and serve with the relish.
