Salmon with Cucumber Chile Relish

The relish

cucumber, peeled, seeded and diced

shallot, minced

serrano chile, remove seeds, minced

mint leaves, minced

lime juice, fresh squeezed
Instructions
- Preheat the oven to 500°F.
- Cut the salmon into 2 pieces, leaving the skin on, and rinse and pat dry.
- Place the salmon skin side down on a metal baking sheet.
- Rub the salmon with olive oil and sprinkle with salt.
- Reduce the oven temperature to 275°F and place the baking sheet on the lowest rack.
- Roast the salmon for 8 to 13 minutes until the centers are still translucent.
- In a medium bowl, stir together the remaining relish ingredients.
- Remove the salmon from the oven, transfer to plates, and serve with the relish.
