Ingredients

Quinoa Salad

  • 1 cup shelled and cooked edamame
  • 1 cup diced cucumber
  • 1 cup sliced bell peppers
  • 4 cups cooked tri-colour quinoa
  • 1 large shredded carrot
  • 1 ½ cups chopped cabbage

Sesame Ginger Dressing

  • ½ teaspoon ground ginger
  • 1 ½ tablespoons maple syrup
  • 2 ½ tablespoons liquid aminos
  • 2 teaspoons distilled white vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon sesame seeds
  • ¼ teaspoon red pepper flakes
  • Juice of two limes lime juice

Instructions

  1. Whisk all the dressing ingredients together in a bowl or shake them in a jar.
  2. Combine all the salad ingredients in a large mixing bowl and toss gently.
  3. Pour the dressing over the salad and mix well to coat.
  4. Serve immediately or refrigerate until ready to serve.
