Wild Fried Rice

Instructions
- Heat the toasted sesame and olive oil in a large skillet.
- Pour the beaten eggs into the skillet and swirl to create a thin layer.
- Cook the omelette for about 45 seconds until it sets, then fold and cook for another 30 seconds.
- Transfer the omelette to a cutting board, let cool, and slice into strips.
- Scrape out any remaining egg from the skillet and use the residual oil to cook the onions over medium-high heat.
- Stir in the wild rice and tofu, cooking until heated through.
- Add the pea sprouts and cook for an additional 20 seconds.
- Gently fold the egg strips back into the skillet and add the tamari, stirring to combine.
- Taste and adjust seasoning as necessary.
