Wild Fried Rice

Ingredients

  • 1 tablespoon toasted sesame oil
  • 1 tablespoon olive oil
  • 3-4 pieces good quality eggs
  • 1 small red onion
  • cups cooked wild rice
  • 6 ounces extra-firm nigari tofu
  • 2 big handfuls pea sprouts
  • 1+ tablespoon tamari or soy sauce

Instructions

  1. Heat the toasted sesame and olive oil in a large skillet.
  2. Pour the beaten eggs into the skillet and swirl to create a thin layer.
  3. Cook the omelette for about 45 seconds until it sets, then fold and cook for another 30 seconds.
  4. Transfer the omelette to a cutting board, let cool, and slice into strips.
  5. Scrape out any remaining egg from the skillet and use the residual oil to cook the onions over medium-high heat.
  6. Stir in the wild rice and tofu, cooking until heated through.
  7. Add the pea sprouts and cook for an additional 20 seconds.
  8. Gently fold the egg strips back into the skillet and add the tamari, stirring to combine.
  9. Taste and adjust seasoning as necessary.
