Ingredients

The rice

  • 1 cup cooked rice

The oil

  • 1 tablespoon high heat oil

The sauce

  • 1 to 2 tablespoons soy sauce or tamari

The vegetables

  • as needed chopped vegetables (e.g., carrots, broccoli, snow peas, edamame, napa cabbage)

Optional additions

  • 1 to 2 eggs (optional)
  • as needed sesame seeds, chopped scallions, nuts, cooked tofu or tempeh (optional)

Instructions

  1. Prepare the rice by using leftover rice for the best texture.
  2. Chop the vegetables into bite-sized pieces.
  3. Mix the sauce ingredients together, keeping it light.
  4. Heat a wok or large skillet over high heat and add the oil.
  5. Add the rice and sauce to the heated oil, along with harder vegetables.
  6. Stir-fry the mixture, flipping constantly until the rice starts to crisp, about 5 to 10 minutes.
  7. Add softer vegetables and cook for an additional 1 to 2 minutes.
  8. If using, push the rice to the side and scramble the eggs in the center.
  9. Combine everything and stir in any additional toppings before serving.
