Fruit and Vegetable Popsicles

Ingredients

Berry Layer

  • 2 cups frozen mixed berries
  • 1 cup plant-based milk, unsweetened

Green Layer

  • 1 cup packed, chopped greens
  • 1 small orange, peeled
  • 2 small ripe bananas, peeled
  • ½ cup plant-based milk, unsweetened

Instructions

  1. Blend the frozen berries and 1 cup of plant-based milk until smooth to make the berry layer.
  2. Blend the greens, peeled orange, bananas, and ½ cup of plant-based milk until smooth to make the green layer.
  3. Pour the berry layer into popsicle molds, filling each about 2/3 full.
  4. Gently pour the green layer on top of the berry layer without stirring.
  5. Insert popsicle sticks and cover the molds, then freeze for 3-4 hours until firm.
