Healthy Layered Popsicles

Ingredients

Yellow layer

  • 1 ¼ cups water
  • 1 heaping cup frozen mango chunks
  • ½ frozen banana frozen banana
  • 1 teaspoon honey (optional)

Green layer

  • 1 handful fresh baby spinach

Red layer

  • 4 to 5 pieces frozen strawberries

Instructions

  1. Blend water, mango, banana, and honey until smooth for the yellow base.
  2. Set aside ⅔ of the yellow mixture and add spinach to the remaining mixture, then blend until smooth.
  3. Pour the green mixture into popsicle molds, filling them ⅓ full, and freeze for 20 minutes.
  4. Pour the yellow mixture on top of the green layer, leaving space for the final layer, and freeze for another 20 minutes.
  5. Blend the remaining yellow mixture with frozen strawberries until smooth.
  6. Remove molds from the freezer and add the strawberry layer, filling to the line, then insert sticks and freeze until solid for 4 to 6 hours.
  7. To remove popsicles, run under warm water for 30 to 60 seconds.
