Red, White & Blue Popsicles

Ingredients

Red Layer

  • 1 cup strawberries, chopped
  • 1 Medjool date pitted (or 1 tablespoon maple syrup)
  • 2 tablespoons water

White Layer

  • 1 cup culinary coconut milk
  • 2 tablespoons maple syrup

Blue Layer

  • ¼ teaspoon spirulina powder (optional)
  • ¼ cup frozen blueberries

Instructions

  1. Blend strawberries, date (or maple syrup), and water until smooth, then pour into popsicle molds.
  2. Freeze the red layer for at least 40 minutes.
  3. Blend coconut milk and maple syrup until smooth, then add to molds for the white layer.
  4. Return molds to the freezer to set.
  5. Blend remaining white mixture with spirulina and blueberries until smooth.
  6. Add the blue layer to the molds and insert popsicle sticks.
  7. Freeze until firm, about 4 to 5 hours.
  8. To remove popsicles, run molds under hot water for about 10 seconds.
