Instructions
- Combine chicken, quinoa, beans, and corn in a microwave-safe storage container.
- Place salsa and grated cheese in small containers and add lime wedges.
- Store the containers for up to 7 days.
- When ready to serve, transfer the chicken mixture to a microwave-safe bowl.
- Stir in salsa and microwave for 60-90 seconds until heated through.
- Stir, season with salt and pepper if desired, add cheese, and squeeze lime juice over the mixture.
- Serve immediately.
