Ingredients

  • ¼ cup frozen corn (optional)
  • ¼ cup salsa
  • 1 ounce grated cheese (cheddar or pepper jack)
  • ½ lime cut into wedges
  • ¼ avocado optional; for serving

Instructions

  1. Combine chicken, quinoa, beans, and corn in a microwave-safe storage container.
  2. Place salsa and grated cheese in small containers and add lime wedges.
  3. Store the containers for up to 7 days.
  4. When ready to serve, transfer the chicken mixture to a microwave-safe bowl.
  5. Stir in salsa and microwave for 60-90 seconds until heated through.
  6. Stir, season with salt and pepper if desired, add cheese, and squeeze lime juice over the mixture.
  7. Serve immediately.
