Instructions
- Preheat the oven to 425ºF.
- Cook the brown rice with salt and water according to package directions.
- In a medium sauce pot, combine chicken breasts, salsa, chicken broth, and chili powder. Stir briefly and cover.
- Bring the chicken mixture to a boil, then reduce heat and simmer for 30 minutes.
- Slice the bell peppers into strips, coat with oil and salt, and spread on a baking sheet.
- Roast the bell peppers in the oven for 20-25 minutes until browned.
- After the chicken has simmered, shred the chicken and return it to the pot, stirring to combine.
- Assemble the meal prep bowls with rice, roasted peppers, shredded chicken, and salsa mixture.
- Top with sliced green onions and sour cream, then serve or refrigerate.
