Ingredients

The rice

  • 1 cup brown rice
  • ½ tsp salt
  • 1.75 cups water

The chicken

  • 2 pieces boneless, skinless chicken breasts (about 1.3 lbs. total)
  • 16 oz salsa
  • ½ cup chicken broth
  • 1 tsp chili powder

The roasted bell peppers

  • 3 pieces bell peppers
  • 1 Tbsp oil
  • 1 pinch salt

The toppings

  • 2 pieces green onions, sliced
  • 4 Tbsp sour cream

Instructions

  1. Preheat the oven to 425ºF.
  2. Cook the brown rice with salt and water according to package directions.
  3. In a medium sauce pot, combine chicken breasts, salsa, chicken broth, and chili powder. Stir briefly and cover.
  4. Bring the chicken mixture to a boil, then reduce heat and simmer for 30 minutes.
  5. Slice the bell peppers into strips, coat with oil and salt, and spread on a baking sheet.
  6. Roast the bell peppers in the oven for 20-25 minutes until browned.
  7. After the chicken has simmered, shred the chicken and return it to the pot, stirring to combine.
  8. Assemble the meal prep bowls with rice, roasted peppers, shredded chicken, and salsa mixture.
  9. Top with sliced green onions and sour cream, then serve or refrigerate.
