Ingredients

Southwestern Chicken

  • 1 tablespoon garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 12 ounces boneless skinless chicken breasts
  • 2 teaspoons avocado oil
  • 2 teaspoons lime juice

Avocado Cilantro Ranch Dressing

  • 1-2 cloves garlic
  • 1 whole avocado
  • 1 tablespoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice or lime juice
  • 1 tablespoon white vinegar or apple cider vinegar
  • ¼ cup fresh parsley
  • cup fresh cilantro
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ¾ cup unsweetened almond milk
  • 1 teaspoon salt

To Serve

  • 10 eggs boiled to preference
  • 12-15 pieces snacking peppers
  • 2 ½ cups mixed greens

Instructions

  1. Mix the garlic powder, chili powder, salt, and paprika, reserving some for later.
  2. Season the chicken breasts with the spice mix and sear them in a hot skillet with avocado oil until cooked through.
  3. Drizzle lime juice over the chicken and let it rest.
  4. Blend all dressing ingredients in a food processor until smooth.
  5. Boil the eggs to your preference.
  6. Slice the rested chicken and assemble the meal prep containers with mixed greens, chicken, peppers, and eggs, then serve with the dressing.
