Ingredients

Baked Tofu

  • 1 pound extra firm tofu
  • 2 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • to taste black pepper

Coconut Bacon

  • 1 tablespoon soy sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon maple syrup
  • 1 teaspoon apple cider vinegar
  • 1 cup unsweetened flaked coconut

Vegan Club Sandwiches

  • 1 ripe avocado
  • 1 ½ tablespoons lemon juice
  • to taste salt
  • 6 to 8 slices sandwich bread
  • 4 leaves green leaf or romaine lettuce
  • 1 large tomato
  • as needed dill pickle slices

Instructions

  1. Slice tofu and marinate in a mixture of maple syrup, soy sauce, apple cider vinegar, garlic, paprika, cumin, and black pepper for at least 30 minutes.
  2. Preheat the oven to 350°F and bake the marinated tofu for 40 minutes, flipping halfway through.
  3. Prepare the coconut bacon by mixing soy sauce, maple syrup, liquid smoke, and apple cider vinegar, then coat the coconut and bake until browned.
  4. Mash the avocado with lemon juice and salt.
  5. Spread the avocado mixture on toasted bread, layer with coconut bacon, baked tofu, lettuce, and tomato slices, then serve with dill pickles.
