Instructions
- Slice tofu and marinate in a mixture of maple syrup, soy sauce, apple cider vinegar, garlic, paprika, cumin, and black pepper for at least 30 minutes.
- Preheat the oven to 350°F and bake the marinated tofu for 40 minutes, flipping halfway through.
- Prepare the coconut bacon by mixing soy sauce, maple syrup, liquid smoke, and apple cider vinegar, then coat the coconut and bake until browned.
- Mash the avocado with lemon juice and salt.
- Spread the avocado mixture on toasted bread, layer with coconut bacon, baked tofu, lettuce, and tomato slices, then serve with dill pickles.
