Instructions
- Preheat the oven to 400°F and prepare a baking dish with cooking spray.
- Cook the bacon until crispy, then remove and set aside, keeping some drippings in the pan.
- Cook the brussels sprouts and onions in the bacon drippings until soft, then add water and cook until evaporated.
- Transfer the brussels sprouts and onions to the baking dish.
- In the same pan, melt butter, add flour, and whisk to form a roux, then gradually add milk and simmer until thickened.
- Stir in thyme, pepper, nutmeg, and cheese until melted, then pour over the brussels sprouts.
- Top with bread crumbs and crumbled bacon, then bake until bubbly and golden.
