Brussels Sprouts Casserole with Bacon

Ingredients

The casserole

  • 2 pounds brussels sprouts
  • ¾ teaspoon kosher salt
  • ½ yellow onion finely diced
  • 1 tablespoon unsalted butter
  • 1 ½ cups 2% milk
  • 1 tablespoon chopped fresh thyme
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg
  • ½ cup freshly grated Gruyère cheese

The topping

  • ¼ cup whole wheat bread crumbs
  • 3 slices thick-cut bacon
  • to taste olive oil cooking spray

Instructions

  1. Preheat the oven to 400°F and prepare a baking dish with cooking spray.
  2. Cook the bacon until crispy, then remove and set aside, keeping some drippings in the pan.
  3. Cook the brussels sprouts and onions in the bacon drippings until soft, then add water and cook until evaporated.
  4. Transfer the brussels sprouts and onions to the baking dish.
  5. In the same pan, melt butter, add flour, and whisk to form a roux, then gradually add milk and simmer until thickened.
  6. Stir in thyme, pepper, nutmeg, and cheese until melted, then pour over the brussels sprouts.
  7. Top with bread crumbs and crumbled bacon, then bake until bubbly and golden.
