Ingredients

The salsa

  • 16 medium tomatillos
  • 6 cloves garlic
  • 3 tablespoons ground chiles
  • 2 teaspoons ground cumin
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • to taste Tabasco sauce
  • to taste salt
  • to taste black pepper

For serving

  • to taste tortilla chips

Instructions

  1. Preheat the oven to broil and line a baking sheet with aluminum foil.
  2. Place the tomatillos and crushed garlic on the baking sheet and broil for about 12 minutes, flipping halfway through.
  3. Peel the garlic after broiling.
  4. In a food processor, combine the charred tomatillos, garlic, ground chiles, cumin, lime zest, lime juice, salt, and pepper.
  5. Process until smooth, then adjust seasoning with Tabasco sauce and additional salt and pepper if needed.
  6. Serve with tortilla chips.
