Chipotle Red Salsa

Ingredients

  • 1 Tbsp avocado or grape seed oil
  • ½ unit white onion (diced)
  • 3 cloves garlic (minced)
  • 1 cup diced carrots
  • 1 pinch salt
  • 1 pinch pepper
  • 1 14.5-ounce can diced tomatoes (no salt added)
  • ½ tsp cumin
  • ½ tsp chili powder
  • 1 small unit chipotle pepper in adobo sauce
  • 1/3 cup vegetable broth (or water)
  • 1-2 Tbsp sweetener of choice (optional)
  • 1 small unit lime (juiced)

Instructions

  1. Heat a skillet over medium heat and prepare the onion, garlic, and carrot.
  2. Add oil, onion, garlic, and carrot to the skillet, seasoning with salt and pepper, and cook for 4 minutes.
  3. Add diced tomatoes, cumin, chili powder, and additional salt and pepper, then simmer for 2-3 minutes.
  4. Transfer the mixture to a blender, adding chipotle pepper, vegetable broth, sweetener, and lime juice, then blend until smooth.
  5. Serve warm, at room temperature, or chilled.
