Instructions
- Heat a skillet over medium heat and prepare the onion, garlic, and carrot.
- Add oil, onion, garlic, and carrot to the skillet, seasoning with salt and pepper, and cook for 4 minutes.
- Add diced tomatoes, cumin, chili powder, and additional salt and pepper, then simmer for 2-3 minutes.
- Transfer the mixture to a blender, adding chipotle pepper, vegetable broth, sweetener, and lime juice, then blend until smooth.
- Serve warm, at room temperature, or chilled.
