Ingredients

The pudding

  • 1 cup fresh young coconut meat
  • ΒΌ cup coconut water
  • 2 teaspoons vanilla extract
  • 2 teaspoons raw honey (or liquid stevia, to taste)

For topping

  • to taste fresh berries

Instructions

  1. Open a young Thai coconut carefully using a cleaver.
  2. Scoop out the coconut meat and place it in a high-powered blender.
  3. Add the coconut water, honey, and vanilla to the blender.
  4. Blend until smooth and creamy, scraping down the sides as necessary.
  5. Adjust sweetness to taste and chill in the fridge for 30 minutes.
  6. Serve topped with fresh berries.
