Instructions
- Open a young Thai coconut carefully using a cleaver.
- Scoop out the coconut meat and place it in a high-powered blender.
- Add the coconut water, honey, and vanilla to the blender.
- Blend until smooth and creamy, scraping down the sides as necessary.
- Adjust sweetness to taste and chill in the fridge for 30 minutes.
- Serve topped with fresh berries.
