Avocado Summer Salad

The salad

The dressing

olive oil

lemon juice

Instructions
- Blanch the corn in boiling water for 2 minutes, then transfer to cold water.
- Cut the corn off the cobs and place it in a large bowl.
- Add the tomatoes, cucumber, bell pepper, and onion to the bowl and stir to combine.
- Gently stir in the chopped avocado.
- Mix the dressing ingredients in a small bowl and pour over the salad.
- Stir to combine and serve immediately or refrigerate in an airtight container.
