Ingredients

Brine

  • 4 cups water
  • 2 tablespoons sugar
  • 2 tablespoons sea salt
  • 1 ¼ pounds boneless skinless chicken breast

Breadcrumbs

  • ¼ cup olive oil
  • 1 ¼ cups panko breadcrumbs

Coating

  • ¼ cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • 2 large eggs

For Cooking

  • 1 spray cooking spray

Instructions

  1. Make the brine by heating 1 cup of water and dissolving the sugar and salt in it.
  2. Combine the remaining water in a larger bowl with the dissolved mixture and let it cool.
  3. Cut the chicken into bite-sized pieces and add them to the cooled brine, refrigerating for 1 hour.
  4. Remove the chicken from the brine and pat dry with paper towels.
  5. Toast the breadcrumbs in a skillet with oil over medium heat for 8 to 10 minutes until golden brown.
  6. Prepare the coating by combining flour, garlic powder, salt, and pepper in one dish, and beating the eggs in another.
  7. Dredge the chicken in the flour mixture, dip in the egg, and then coat with breadcrumbs.
  8. Preheat the air fryer to 400°F and spray the chicken with cooking spray.
  9. Cook the chicken nuggets for 8 to 10 minutes until golden brown and cooked through.
