Homemade Air Fryer Chicken Nuggets

Instructions
- Make the brine by heating 1 cup of water and dissolving the sugar and salt in it.
- Combine the remaining water in a larger bowl with the dissolved mixture and let it cool.
- Cut the chicken into bite-sized pieces and add them to the cooled brine, refrigerating for 1 hour.
- Remove the chicken from the brine and pat dry with paper towels.
- Toast the breadcrumbs in a skillet with oil over medium heat for 8 to 10 minutes until golden brown.
- Prepare the coating by combining flour, garlic powder, salt, and pepper in one dish, and beating the eggs in another.
- Dredge the chicken in the flour mixture, dip in the egg, and then coat with breadcrumbs.
- Preheat the air fryer to 400°F and spray the chicken with cooking spray.
- Cook the chicken nuggets for 8 to 10 minutes until golden brown and cooked through.
