Instructions
- Chop the cauliflower and boil it in vegetable broth until soft.
- Melt butter in a skillet and sauté minced garlic until fragrant.
- Cook fettuccine in boiling water according to package instructions, reserving some starchy water.
- Blend cooked cauliflower with some broth, sautéed garlic, salt, nutmeg, and black pepper until smooth.
- Stream olive oil into the blender while blending the mixture.
- Return the smooth mixture to the skillet, add cream, and keep warm.
- Combine the noodles with the sauce and serve immediately.
