Ingredients

The pasta

  • 1 lb. uncooked fettuccine noodles

The sauce

  • 3 small heads cauliflower
  • 6 cups vegetable broth
  • 6 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 pinch nutmeg
  • 1 pinch black pepper
  • 1 tablespoon olive oil
  • ¼ cup heavy cream
  • 1 cup starchy boiling water from pasta pot

Instructions

  1. Chop the cauliflower and boil it in vegetable broth until soft.
  2. Melt butter in a skillet and sauté minced garlic until fragrant.
  3. Cook fettuccine in boiling water according to package instructions, reserving some starchy water.
  4. Blend cooked cauliflower with some broth, sautéed garlic, salt, nutmeg, and black pepper until smooth.
  5. Stream olive oil into the blender while blending the mixture.
  6. Return the smooth mixture to the skillet, add cream, and keep warm.
  7. Combine the noodles with the sauce and serve immediately.
