Ingredients

The sauce

  • 4 cups cauliflower florets
  • ½ tablespoon extra-virgin olive oil
  • 1 tablespoon minced garlic
  • ½ cup unsweetened and unflavoured almond milk
  • ¼ cup nutritional yeast
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon onion powder
  • ¼ to ½ teaspoon garlic powder
  • ¾ teaspoon fine grain sea salt
  • ¼ to ½ teaspoon black pepper

The pasta

  • 1 package (350 g/12 ounces) fettuccine or rotini pasta

For garnish

  • to taste fresh minced parsley

Instructions

  1. Steam or boil the cauliflower until fork tender.
  2. Cook the pasta according to package directions and drain.
  3. Sauté garlic in olive oil until softened.
  4. Blend cooked cauliflower, sautéed garlic, almond milk, nutritional yeast, lemon juice, onion powder, garlic powder, salt, and pepper until smooth.
  5. Combine the cauliflower sauce with the pasta and heat through.
  6. Serve topped with additional seasoning, lemon juice, and parsley.
