Parmesan and Chicken Zoodles

Ingredients

The zoodles

  • 2-3 large zucchinis
  • 1 tbsp ghee
  • 1/8 tsp Himalayan salt
  • 1/4 tsp freshly ground black pepper
  • 2 large garlic cloves

The chicken

  • 10 oz leftover cooked chicken

The sauce

  • 1/2 cup plain Greek yogurt
  • 1/2 cup grated parmesan cheese

Optional garnish

  • to taste microgreens
  • to taste Parmesan cheese shavings

Instructions

  1. Sprinkle the spiralized zucchini with salt and place it in a sieve to drain for about 10 minutes.
  2. Melt ghee in a skillet over medium-high heat, add the chicken, salt, and pepper, and cook until crispy.
  3. Add minced garlic, zucchini noodles, and 2 to 3 tablespoons of zucchini water to the skillet, and cook for about 1 minute.
  4. Remove from heat, add yogurt and grated Parmesan, and mix gently until combined.
  5. Serve immediately, garnished with additional Parmesan and microgreens.
