Parmesan and Chicken Zoodles

Instructions
- Sprinkle the spiralized zucchini with salt and place it in a sieve to drain for about 10 minutes.
- Melt ghee in a skillet over medium-high heat, add the chicken, salt, and pepper, and cook until crispy.
- Add minced garlic, zucchini noodles, and 2 to 3 tablespoons of zucchini water to the skillet, and cook for about 1 minute.
- Remove from heat, add yogurt and grated Parmesan, and mix gently until combined.
- Serve immediately, garnished with additional Parmesan and microgreens.
