Ingredients

The salad

  • 1 pound Brussels sprouts, finely shredded
  • 1/3 cup pecans, chopped
  • 1/3 cup dried cranberries
  • 1/2 cup shallot, diced

The dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon spicy brown mustard
  • 1 inch fresh ginger, finely grated
  • 2 tablespoons honey
  • salt to taste
  • pepper to taste

Instructions

  1. Prepare the dressing by whisking together olive oil, vinegar, mustard, ginger, honey, salt, and pepper in a large bowl.
  2. Finely dice the shallot and add it to the dressing to mellow the flavor.
  3. Shred the Brussels sprouts and add them to the bowl, tossing well to coat them in the dressing.
  4. Add the dried cranberries and chopped pecans, then toss again.
  5. Adjust seasoning to taste and let the salad marinate for at least 30 minutes before serving.
