Instructions
- Preheat the oven to 350°F and prepare a 9×5 loaf pan.
- In a large bowl, whisk together the sugars, flours, baking soda, salt, and spices.
- Make a well in the center and add the pumpkin, eggs, melted coconut oil, water, and vanilla.
- Mix until the batter is smooth but slightly lumpy, being careful not to over-mix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, testing with a toothpick for doneness.
- Cool in the pan for 20 minutes before inverting onto a rack to cool completely.
