Ingredients

  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 cup all-purpose flour
  • ¾ cup white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ¾ cup pumpkin puree
  • 2 large eggs
  • ½ cup melted coconut oil
  • cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5 loaf pan.
  2. In a large bowl, whisk together the sugars, flours, baking soda, salt, and spices.
  3. Make a well in the center and add the pumpkin, eggs, melted coconut oil, water, and vanilla.
  4. Mix until the batter is smooth but slightly lumpy, being careful not to over-mix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-65 minutes, testing with a toothpick for doneness.
  7. Cool in the pan for 20 minutes before inverting onto a rack to cool completely.
