Ingredients

The Salsa

  • 1 can black beans, rinsed and drained
  • 1 ear sweet corn, kernels removed from cob
  • 2 avocados, pit and skin removed, diced
  • 2 medium tomatoes, seeded and chopped
  • ¼ cup diced red onion
  • 1 small jalapeño, seeds removed and minced
  • cup chopped cilantro
  • Juice of 1 large lime
  • to taste salt and pepper

The Polenta Rounds

  • 1 16-ounce tube prepared polenta
  • to brush olive oil

Instructions

  1. Combine black beans, avocado, corn, tomatoes, red onion, jalapeño, cilantro, and lime juice in a bowl for the salsa. Season with salt and pepper, then set aside.
  2. Preheat the grill to medium-high heat. Slice the polenta into rounds and brush both sides with olive oil.
  3. Grill the polenta rounds for 2-3 minutes on each side until grill marks appear. Remove from the grill.
  4. Top the grilled polenta rounds with salsa and serve immediately.
