Grilled Polenta Rounds with Black Bean and Avocado Salsa

The Polenta Rounds

16-ounce tube
prepared polenta

to brush
olive oil
Instructions
- Combine black beans, avocado, corn, tomatoes, red onion, jalapeño, cilantro, and lime juice in a bowl for the salsa. Season with salt and pepper, then set aside.
- Preheat the grill to medium-high heat. Slice the polenta into rounds and brush both sides with olive oil.
- Grill the polenta rounds for 2-3 minutes on each side until grill marks appear. Remove from the grill.
- Top the grilled polenta rounds with salsa and serve immediately.
