Instructions
- Bring 3 cups of water and 3 cups of milk to a low boil in a large pot.
- Whisk in the polenta and cook for 15-20 minutes until thickened.
- Stir in the butter and cheddar cheese until melted, then add the corn and season with salt and pepper.
- Preheat the grill to medium-high heat.
- In a large zip-top bag or bowl, combine the chicken, BBQ sauce, and honey, tossing to coat.
- Grill the chicken for 3-4 minutes per side, brushing with leftover BBQ sauce, until cooked through.
- Let the chicken rest for 5 minutes before slicing against the grain.
- To serve, divide the polenta among bowls and top with sliced peaches, avocado, and BBQ chicken.
- Garnish with cilantro and chives.
