Honey BBQ Chicken and Charred Corn Polenta

Ingredients

Polenta

  • 2 cup polenta
  • 3 cup whole milk
  • 2 tablespoon butter
  • ¾ cup shredded sharp cheddar
  • 2 ears sweet corn
  • to taste none kosher salt

BBQ Chicken

  • pounds boneless skinless chicken breast or tenders
  • 1 cup BBQ sauce
  • ¼ cup honey
  • 2 pieces peaches
  • 1 piece avocado
  • 1 handful fresh cilantro
  • to taste none fresh chopped chives

Instructions

  1. Bring 3 cups of water and 3 cups of milk to a low boil in a large pot.
  2. Whisk in the polenta and cook for 15-20 minutes until thickened.
  3. Stir in the butter and cheddar cheese until melted, then add the corn and season with salt and pepper.
  4. Preheat the grill to medium-high heat.
  5. In a large zip-top bag or bowl, combine the chicken, BBQ sauce, and honey, tossing to coat.
  6. Grill the chicken for 3-4 minutes per side, brushing with leftover BBQ sauce, until cooked through.
  7. Let the chicken rest for 5 minutes before slicing against the grain.
  8. To serve, divide the polenta among bowls and top with sliced peaches, avocado, and BBQ chicken.
  9. Garnish with cilantro and chives.
