Ingredients

The chicken tenders

  • lbs Boneless skinless chicken breasts (cut into 12 strips)

The breading

  • ½ cup Avocado oil mayonnaise
  • oz Pork rinds (crushed)
  • ¼ cup Whey protein powder (or collagen protein powder for dairy free)
  • ½ tsp Garlic powder
  • ½ tsp Paprika

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking sheet with foil and grease it.
  2. In one bowl, place the mayonnaise, and in another bowl, mix the crushed pork rinds, protein powder, garlic powder, and paprika.
  3. Coat the chicken strips in mayonnaise, then press them into the breading mixture to coat thoroughly.
  4. Arrange the coated chicken strips on the baking sheet without touching each other.
  5. Bake for 12-15 minutes until just cooked through, then broil for 1-2 minutes to crisp the breading.
