Tuna Niçoise Salad

Ingredients

Dressing

  • ¾ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice or white wine vinegar
  • 2 Tbsp. Dijon mustard
  • 1 tsp. honey
  • 1 tsp. freshly ground black pepper
  • 1 tsp. kosher salt

Salad

  • 1 lb. green beans
  • 6 pieces Jammy Soft-Boiled Eggs
  • 4 cups thinly sliced seedless cucumbers
  • 3 cups oil-packed tuna
  • to taste olives, capers, peperoncini, pickles, anchovy fillets, or other pickled-briny ingredients
  • to taste flaky sea salt

Potatoes

  • 1 lb. baby Gold or red potatoes

Instructions

  1. Whisk together the dressing ingredients and set aside.
  2. Boil salted water and cook the green beans and potatoes until tender, then chill in ice water.
  3. Arrange the salad with sliced eggs, green beans, potatoes, cucumbers, and tuna on a platter.
  4. Top with pickled ingredients, sprinkle with sea salt, and drizzle with dressing before serving.
