Nicoise Salad

The dressing

Instructions
- If using fresh tuna, season it with salt and pepper, rub with olive oil, and sear in a skillet for about 3 minutes on each side.
- Boil the potatoes in water until tender, then cool, drain, and slice them.
- Boil eggs for about 17 minutes, cool in cold water, peel, and cut into quarters.
- Blanch green beans in hot water for 2-3 minutes, then cool in ice water and drain.
- Slice cherry tomatoes in half.
- If using canned tuna, drain and set aside.
- Arrange mixed greens, green beans, olives, hard-boiled eggs, potato slices, tomatoes, and tuna on a plate.
- For the dressing, blend garlic, red wine vinegar, balsamic vinegar, Dijon mustard, olive oil, anchovy, sugar, salt, and pepper until well combined.
- Serve the salad with the dressing and garnish with fresh parsley.
