Nicoise Salad

The salad

small yellow or red potatoes

fresh green beans

cooked white beans

hard boiled eggs

quartered radishes and/or sliced cucumber

cherry tomatoes

Niçoise or Kalamata olives

capers

chopped parsley
The dressing

lemon vinaigrette

Instructions
- Boil the potatoes in salted water until fork-tender, then drain and slice.
- Blanch the green beans in boiling water for 2 minutes, then transfer to ice water to cool.
- Assemble the salad by combining the potatoes, green beans, white beans, eggs, artichokes, radishes, tomatoes, olives, and capers.
- Drizzle the salad generously with lemon vinaigrette.
- Garnish with parsley and season with salt and pepper to taste.
