Nicoise Pasta Salad

The vinaigrette dressing

extra virgin olive oil

fresh lemon juice

Instructions
- Make the vinaigrette by shaking all dressing ingredients in a jar.
- Boil potatoes in salted water until tender, about 15 minutes, then dress with vinaigrette.
- Cook pasta in salted water until al dente, then rinse and set aside.
- Blanch green beans in the reserved pasta water for 1 minute, then rinse and cool.
- In a large bowl, combine noodles, dressed potatoes, green beans, chicken, tomatoes, olives, cucumber, bell pepper, onion, and capers.
- Toss everything with the vinaigrette and adjust seasoning.
- Nestle hard-boiled egg quarters into the salad and serve.
