Nicoise Pasta Salad

Ingredients

The salad

  • 8 ounces egg noodles, such as tagliatelle or pappardelle
  • 2 cups petite white or red potatoes
  • 6 ounces green beans, trimmed and cut into 1-inch pieces
  • 3 cups shredded chicken breast
  • 1 ½ cups cherry tomatoes, halved
  • 1 cup pitted kalamata olives
  • ½ each English cucumber, peeled, seeded, and sliced
  • ½ cup sliced red bell pepper
  • ½ cup sliced red onion
  • cup capers, drained
  • 4 each hard-boiled eggs, quartered

The vinaigrette dressing

  • cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 tablespoon minced shallot
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole grain mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Make the vinaigrette by shaking all dressing ingredients in a jar.
  2. Boil potatoes in salted water until tender, about 15 minutes, then dress with vinaigrette.
  3. Cook pasta in salted water until al dente, then rinse and set aside.
  4. Blanch green beans in the reserved pasta water for 1 minute, then rinse and cool.
  5. In a large bowl, combine noodles, dressed potatoes, green beans, chicken, tomatoes, olives, cucumber, bell pepper, onion, and capers.
  6. Toss everything with the vinaigrette and adjust seasoning.
  7. Nestle hard-boiled egg quarters into the salad and serve.
