Instructions
- Grate the fresh tomatoes and set aside.
- Mince the onions and garlic.
- Heat olive oil in a large pot and sauté the garlic and onions until translucent.
- Add the grated tomatoes, tomato paste, and salt, and stir well.
- Incorporate the dried herbs and stir for one minute.
- If the sauce is too liquidy, add the canned crushed tomatoes.
- Stir in honey and the parmesan rind for flavor.
- Let the sauce simmer uncovered for 1-2 hours, stirring occasionally.
- Remove from heat and add torn basil.
- Cool the sauce and portion into bags for freezing or use immediately.
