Ingredients

Fresh Ingredients

  • 10-12 whole fresh tomatoes
  • 5 cloves garlic
  • ½ large onion
  • ½ cup fresh basil

Seasonings and Condiments

  • 3 tsp dried Italian seasoning
  • 3 tbsp tomato paste
  • 28 oz canned crushed tomatoes
  • 1 tsp honey
  • 1 piece parmesan rind

Instructions

  1. Grate the fresh tomatoes and set aside.
  2. Mince the onions and garlic.
  3. Heat olive oil in a large pot and sauté the garlic and onions until translucent.
  4. Add the grated tomatoes, tomato paste, and salt, and stir well.
  5. Incorporate the dried herbs and stir for one minute.
  6. If the sauce is too liquidy, add the canned crushed tomatoes.
  7. Stir in honey and the parmesan rind for flavor.
  8. Let the sauce simmer uncovered for 1-2 hours, stirring occasionally.
  9. Remove from heat and add torn basil.
  10. Cool the sauce and portion into bags for freezing or use immediately.
