Ingredients

  • 1 ½ cups oat flour
  • ¾ cup pumpkin puree
  • 1 cup maple syrup
  • 4 teaspoons pumpkin pie spice
  • 3 large eggs
  • ¼ cup melted coconut oil
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 350ºF and prepare a 9-inch by 5-inch loaf pan with oil and parchment paper.
  2. In a large mixing bowl, combine all the ingredients and mix well.
  3. Pour the batter into the prepared pan and smooth the top.
  4. Bake for about 55 minutes until the loaf rises and cracks on top.
  5. Let the bread cool completely before slicing.
