Ingredients

  • 2 pieces eggs
  • ½ cup pumpkin puree
  • ½ cup plain Greek yogurt
  • cup honey
  • 1 tsp vanilla
  • ¾ cup quick oats
  • 1 cup oat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper or nonstick spray.
  2. In a small bowl, whisk the eggs.
  3. Add the pumpkin puree, Greek yogurt, honey, and vanilla to the eggs and stir until combined.
  4. In a large bowl, mix together the oats, oat flour, baking soda, spices, and salt.
  5. Combine the wet and dry ingredients and stir until mixed. Fold in the chocolate chips, saving some for the top.
  6. Bake in the oven for 45-50 minutes or until a toothpick comes out clean. Cover with aluminum foil if the top browns too quickly.
