Instructions
- Preheat the oven to 350°F and prepare a loaf pan with parchment paper or nonstick spray.
- In a small bowl, whisk the eggs.
- Add the pumpkin puree, Greek yogurt, honey, and vanilla to the eggs and stir until combined.
- In a large bowl, mix together the oats, oat flour, baking soda, spices, and salt.
- Combine the wet and dry ingredients and stir until mixed. Fold in the chocolate chips, saving some for the top.
- Bake in the oven for 45-50 minutes or until a toothpick comes out clean. Cover with aluminum foil if the top browns too quickly.
