Instructions
- Combine sugar and cinnamon in a small bowl and set aside.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, beat butter and sugar until light and fluffy.
- Add egg yolk and vanilla, and mix until well combined.
- Mix in flour, baking soda, cream of tartar, and salt until the dough forms.
- Divide the dough into 6 parts and roll into balls.
- Roll each ball in the cinnamon sugar and place on the baking sheet, spacing them apart.
- Flatten each cookie to ½-inch thick.
- Bake for 9 to 12 minutes until the edges are barely golden.
- Cool on the tray and enjoy.
