Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- Cream together the softened butter and sugar in a medium mixing bowl using a hand mixer until light and fluffy.
- Add the egg and vanilla extract, mixing until just combined.
- In a separate bowl, whisk together the dry ingredients: flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients until well combined.
- In a small bowl, whisk together the cinnamon and sugar for the coating.
- Roll the dough into 2-tablespoon sized balls and coat them in the cinnamon sugar mixture.
- Place the dough balls on the prepared cookie sheet, leaving space between them.
- Bake for 10-12 minutes until the edges are set and the cookies are crackled and golden.
- Let the cookies sit for 2-3 minutes before transferring them to a cooling rack.
