Ingredients

The dough

  • 2 2/3 cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp cream of tartar
  • ½ tsp salt
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 ½ tsp vanilla extract

The cinnamon sugar coating

  • 2 ½ Tbsp granulated sugar
  • 2 ½ tsp ground cinnamon

Instructions

  1. Whisk together flour, baking soda, cream of tartar, and salt in a mixing bowl.
  2. In an electric mixer, cream together butter, granulated sugar, and brown sugar until combined.
  3. Mix in the egg, then blend in the egg yolk and vanilla extract.
  4. Add the dry ingredients to the mixture and mix until just combined.
  5. In a small bowl, whisk together the granulated sugar and cinnamon.
  6. Scoop out 2 Tbsp of dough at a time and shape into balls.
  7. Roll each ball in the cinnamon sugar mixture to coat.
  8. Chill the dough balls for 30 minutes to 1 hour.
  9. Preheat the oven to 350°F while the dough is chilling.
  10. Transfer 12 dough balls to a lined baking sheet, spacing them apart.
  11. Bake in the preheated oven for 9 to 10 minutes until nearly set but soft in the center.
  12. Cool on the baking sheet for a few minutes before transferring to a wire rack.
