Instructions
- Whisk together flour, baking soda, cream of tartar, and salt in a mixing bowl.
- In an electric mixer, cream together butter, granulated sugar, and brown sugar until combined.
- Mix in the egg, then blend in the egg yolk and vanilla extract.
- Add the dry ingredients to the mixture and mix until just combined.
- In a small bowl, whisk together the granulated sugar and cinnamon.
- Scoop out 2 Tbsp of dough at a time and shape into balls.
- Roll each ball in the cinnamon sugar mixture to coat.
- Chill the dough balls for 30 minutes to 1 hour.
- Preheat the oven to 350°F while the dough is chilling.
- Transfer 12 dough balls to a lined baking sheet, spacing them apart.
- Bake in the preheated oven for 9 to 10 minutes until nearly set but soft in the center.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
