Ingredients

The shortbread

  • ¾ cup butter, softened
  • ½ cup granulated sugar
  • cups all-purpose flour
  • ½ teaspoon salt

The caramel

  • 1 can sweetened condensed milk (14 ounces)
  • ¼ cup butter
  • 2 tablespoons light corn syrup
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract

The chocolate topping

  • 2 bars semisweet chocolate (4 ounces each)

Instructions

  1. Preheat the oven to 325°F and prepare an 8-inch baking pan with parchment and non-stick spray.
  2. Cream together the butter and sugar until fluffy, then mix in the flour and salt until it resembles coarse sand.
  3. Press the mixture into the prepared pan and bake until golden brown, about 30 to 35 minutes. Let cool.
  4. In a saucepan, combine the sweetened condensed milk, butter, corn syrup, and salt; cook over medium heat while stirring until thickened and butterscotch-colored.
  5. Remove from heat, stir in vanilla, and pour over the cooled shortbread crust.
  6. Melt the chocolate in the microwave in increments, stirring until smooth, then pour over the caramel layer.
  7. Chill until the chocolate is set, then cut into squares and serve.
