Spicy Moroccan Fried Eggs

Ingredients

The eggs

  • 6 units eggs

The infused oil

  • ΒΌ cup olive oil
  • 1 teaspoon paprika
  • a pinch crushed red pepper flakes
  • a pinch saffron
  • 1 tablespoon olive oil or butter

For serving

  • to taste cumin
  • to taste kosher salt
  • to taste pepper
  • 1 cup kalamata olives
  • various fresh tomatoes, cucumbers, fruit, dried fruit, nuts, and bread

Instructions

  1. Combine olive oil, paprika, crushed red pepper flakes, and saffron in a small saucepan and cook over medium heat for 5 minutes to infuse the oil.
  2. Heat a skillet with olive oil or butter over medium-high heat and fry the eggs to your liking, seasoning with cumin, salt, and pepper.
  3. Sprinkle the fried eggs with sesame seeds and drizzle with the infused oil before breaking the yolk.
  4. Serve the eggs with bread and olives.
