Olive Oil Fried Eggs

Ingredients

Sautéed Kale

  • 1 large bunch kale
  • 1 clove garlic
  • 2 stalks green onions
  • ¼ teaspoon crushed red pepper
  • ¼ lemon juice
  • to taste teaspoon salt
  • few teaspoons olive oil

Olive Oil-Fried Eggs

  • 2-3 tablespoons olive oil
  • 2 large eggs

For Serving

  • 1 dollop harissa
  • to taste slices toast

Instructions

  1. Sauté kale with olive oil, garlic, green onions, crushed red pepper, and salt until wilted.
  2. In a separate skillet, heat olive oil and fry eggs until the whites are crispy.
  3. Transfer fried eggs to paper towels to drain excess oil.
  4. Serve sautéed kale on plates, top with fried eggs, and garnish with harissa and toast.
