Fried Eggs on Kale bed

Ingredients

The base

  • 2 cup kale
  • ¼ cup cream
  • 1 Tablespoon olive oil
  • 2 teaspoon turmeric
  • Salt to taste
  • Pepper to taste

The eggs

  • 4 organic eggs

The topping

  • ¼ cup Parmesan

Instructions

  1. Steam the kale for 2 to 3 minutes.
  2. Drain the kale and sauté it in a little butter or olive oil.
  3. Add turmeric, cream, salt, pepper, and grated cheese to the kale and mix well.
  4. Reduce the heat and beat the eggs into the kale mixture.
  5. Cover the pan with a lid and cook for about 5 minutes to cook the egg whites.
